It’s no secret that I love breakfast food–just not at breakfast! Give me all of the cinnamon rolls, pancakes, eggs and bacon…..at supper time 🙂
It’s so crazy, I know, but when I made these breakfast burritos about a week ago, I had so much left over that I was able to make 5 more burritos and freeze them individually. Because of that, I’ve been able to grab a frozen burrito, heat it up, and eat it on the go! And you’ll be glad to know, some of them have been eaten for actual breakfast!
Breakfast Burrito
whole wheat tortillas
scrambled eggs
turkey sausage, cooked and crumbled
red onion, sauteed
grated cheddar cheese
1. Scramble your eggs, cook your turkey sausage, and saute your red onion.
2. Set up an assembly line and layer: egg first, then sausage, red onion, and cheese.
3. Fold into a burrito/mine folded into a little packet.
4. Enjoy!
The best thing about these breakfast burritos is that you can use any sort of topping you want! Crumbled bacon, jalepenos, a different type of cheese, salsa–anything! Your family will love these!
To Freeze:
-prepare each burrito like normal
-wrap tightly with wax paper (or you could use parchment)
-wrap again in foil making sure everything is closed off
-place in your freezer!
To Reheat:
-take off foil
-leave in wax paper and heat up anywhere from 1:15 to 1:45–mine never took a full 2 minutes
