I made this recipe last Tuesday night and posted a picture of it to Instagram before even trying it and had lots of comments about wanting the recipe. Let me tell you–it was as good as it looked!! I loved them…Dustin loved them…we all loved them! I can’t wait to make these again and add a little salsa to my mix.
Green Chile Chicken Tacos
2 chicken breasts, cooked
1 large can of chopped green chiles
1 cup nonfat plain Greek yogurt (or you can use sour cream)
1 cup nonfat plain Greek yogurt (or you can use sour cream)
1 can Rotel
1 green bell pepper, diced
2 cups Shredded cheese
Stand and Stuff Taco shells
1. Preheat your oven to 400 degrees and lightly grease your baking dish.
2. In a large bowl, mix together your shredded chicken, green chiles, Greek yogurt, Rotel, bell pepper, and 1 cup of shredded cheese.
3. Fill each taco shell with the mixture and stand up in your baking dish. After all of your tacos are filled and in the dish, sprinkle the rest of your cheese over the top of your tacos.
4. Bake about 10-15 minutes, or until your cheese is fully melted. Enjoy!
**This made 6 tacos for me.
