Last night I was talking to my friend Victoria about meals that are perfect for the days leading up to Thanksgiving. If you’re like me, you’re too busy planning and preparing for Thanksgiving and not really into whipping up a huge dinner. I’ve made this casserole recipe before and it was requested again by my husband. It was a perfect size dish that lasted us for a few meals.
As my husband and I were eating the last of this casserole last night for dinner, I mentioned how perfect it was for cold weather, too (it was 31 degrees last night!!). I originally found this recipe on Mix and Match Mama (because I love her), but I altered it to fit my family’s needs.
Sloppy Joe Casserole
1 lb ground turkey (lean)
1 onion, chopped
1 1/4 cup ketchup
1/4 cup Splenda brown sugar
2 tbsp Worcestershire sauce
1 tbsp chili powder (I like to use 2 tbsp)
1 box Jiffy cornbread mix
1/2 cup milk
1 egg
1. Preheat oven to 350 and grease a 9×13 inch dish
2. Brown turkey meat and onion together.
3. After meat is browned, add in ketchup, brown sugar, Worcestershire sauce, and chili powder. Stir and let simmer for 5-7 minutes. Pour this mixture into your greased 9×13 pan.
4. Mix together Jiffy mix, milk, and egg. Pour this mixture over the meat mixture and spread out as evenly as you can over the meat.
5. Bake about 20 minutes.
