Cinco de Mayo is quickly approaching and while I love a good excuse to celebrate anything, I’m not always a fan of eating the fattening, heavy foods that go with most celebrations. Anyone with me?
I really do love eating Mexican food, but I prefer to make my own so I can make it much healthier than if I were to go to our local Mexican joint. These pictures are old, but it just goes to show you that I’ve been making this recipe for a while now and it never fails to disappoint!
How to Make Your Own Oven Baked Nachos:
1. Spray your glass pie dish with Pam.
2. Layer with tortilla chips.
3. Layer with your meat–either beef that you’ve already cooked with taco seasoning or chicken you’ve cooked in the crock pot with salsa
4. Layer with fat free refried beans (these won’t spread easily so do the best you can)
5. Layer with a few spoonfuls of salsa
6. Top with shredded cheese
7. Optional: add black olives or jalepenos on top of the cheese
-Bake at 400 until cheese is fully melted (around 10 minutes)
I hope these make you as happy as they make me and Dustin whenever I cook them! This is the easiest meal, and it’s never the same because I’m always changing up ingredients.
So celebrate Cinco de Mayo with a healthier version of nachos so you can splurge on that margarita!

I did something similar to this last night, but with ground chicken instead of ground beef and used rice to make it more filling. I would definitely rather have the margarita!
