I mentioned this recipe in my post yesterday and had a few requests for the recipe. I had already planned on doing a recipe post for this, so I’m glad I’m going ahead and getting it posted today!
I’ve only made this twice, and the second time I made it was because Dustin requested it. And since Dustin is a meat and potatoes kind of guy, you know this had to have been filling and tasty for him to want it again.
It’s so simple to make and I hope that you’re able to try it out with your family 🙂
Quinoa Fried “Rice”
This makes 5-6 servings.
1 cup dry quinoa
2 cups water
1 tsp ginger paste
1 cup frozen carrots
1/2 white onion, chopped
1/2 cup frozen peas
2 eggs
1 tbs sesame oil
1/2 cup low-sodium soy sauce
1. Prepare your quinoa with the 2 cups of water and set aside.
2. In a smaller skillet, scramble your two eggs, chop them up, and set aside.
3. In a large skillet, heat the 1 tbs sesame oil. Add in the chopped onion and frozen carrots. Saute until carrots are no longer frozen and add in the ginger paste and frozen peas. Saute for 1-2 minutes or until the peas are no longer frozen.
4. Add the quinoa, scrambled eggs, and soy sauce to the skillet and cook until everything is warmed throughout!
See how easy and simple that recipe is? It took me a little longer the first time I made it because I was trying to figure out what I was doing, but I changed a few things the second time and everything went smoothly! Enjoy!
(Oh, and don’t hesitate to add any cooked meat to the quinoa, too. I added a few grilled chicken strips to Dustin’s and I ate mine without any meat.)
