Friday Favorites!

Happy Friday, y’all!   

 I hope your week has been good because this has been me…

Not even kidding!  Wednesday was our first day with students, and I remember finally getting to sit down at lunch and thinking that if I could just close my eyes for a second I would fall asleep.  If only, right? 🙂  


I actually stayed up late last night because of…
I’m either older or paying more attention this year because his events have been way more appealing to me this year than any other Olympics.  Who’s with me?

And speaking of Michael Phelps, if you haven’t seen his Under Armor ad yet, watch it RIGHT NOW.  A few people shared it on Facebook and I sent it to my sister and dad–it’s really inspiring!


Aaaaannnnd this will be me this afternoon…

Back to School Fashion for Teachers

When I first started teaching, my goal was to never dress like a teacher.  My thoughts on teacher fashion came about from my memories of teachers dressing in the 90s.  Anyone remember your teachers wearing sweater vests themed for holidays or seasons?  Umm not going in my closet!  

Granted I do own some clothes are are strictly for school and some clothes not allowed for school (rompers, racerback tanks), but the majority of what I buy should be feasible for teaching in and wearing outside of school without making people look at me and say, “She must be a teacher!  Look at her outfit!”

Since today is the first day of school for students in my system, I thought I would share some of my outfit inspiration for the school year.  A lot of these outfits are for fall or winter and that’s because those are my favorite seasons for clothes.  🙂

 I already have a camel pea coat in a length just an inch or two shorter than this coat.  I also already own an oversized sweater, so all I need are leather leggings.



 Love how chic this outfit is and I already have all of the pieces!  I own a chiffon blouse, black legging jeans, and the most comfortable black flats I’ve ever worn.  (They honestly feel like slippers!)



 Okay so not going to wear the heels to school since I stand all day on a concrete floor, but the rest of the outfit I love!  I know the girl above is wearing a coat, but I would love to recreate this wearing an oversized sweater.  I’ve already got the black pants and orange scarf!



 Y’all, I love both of these outfits so much and I love that they both look like they are straight out of Anthropologie (my favorite store).  Unfortunately, they are from Chloe’s spring line and not affordable for a teacher!  In order to recreate these looks, I would just go to Anthro.  And the dress looks exactly like a dress Anthro carried this summer but is sold out already because I couldn’t find it online.



Sometimes a girl needs to wear a little black on black!  Cropped black dress pants and a black sweater–so easy!



Let’s not forget casual Friday because this is my favorite day for many reasons.  And I really love that I own every piece in this photo already.  Oversized sweater, distressed jeans, nude flats, and a scarf–this makes me so excited for fall!

Oven Baked Rotel and Chicken Tacos

I started out with big plans for this recipe.  Without even really checking to make sure I had all of the ingredients, I threw a couple of chicken breasts in the crockpot one morning before I had a busy day out and about.

When I got ready to start putting these tacos together, I realized I didn’t have any of the ingredients the original recipe called for…oops!  But the great thing about this recipe is that I used what I had on hand and made some really great tacos–they were even husband-approved 🙂


Oven Baked Rotel and Chicken Tacos
(This made 8 tacos for me)

2 chicken breasts, cooked and shredded
1-2 tsp chili powder
1-2 tsp ground cumin
1 cup plain Greek yogurt (or sour cream)
1 can Rotel, semi-drained
1/2 white onion, diced
1 cup shredded fiesta cheese, plus some for topping
Stand-n-Stuff taco shells

1. Preheat oven to 400 degrees and lightly grease your 9×13 baking dish.
2. In a bowl, combine all ingredients except for the extra cheese.
3.  Fill each taco shell and place in baking dish.
4.  Top each taco off with some shredded cheese. Bake until cheese is melted–about 10-15 minutes.  Enjoy!

This recipe is perfect for busy nights since it only takes a few minutes to throw everything together.  The flavors in these tacos are amazing!
